Falafels & savoury rice

Ingredients
300g basmati rice, uncooked
½ onion
2 cloves garlic
vegetables of choice
1 teaspoon turmeric
2 teaspoons smoked paprika
1 teaspoon chilli powder
2 teaspoons stock powder
2 teaspoons lemon juice
Bring a large saucepan of water to the boil and add your rice. Turn down the heat to a simmer.
After 6 – 8 minutes, check the rice is cooked by tasting. Drain the water away through a sieve. Leave to drain for a few minutes to dry as much as possible.
While your rice is cooking:
-chop your onion and mince your garlic, chop any vegetables into similar sized pieces.
-measure your spices onto a plate.
Heat a wok or a large frying pan over a medium to high heat.
Pour in about 2 tablespoons vegetable oil. Once hot, stir in the onion. Lower the heat slightly and stir over the heat for 3/4 minutes until soft.
Stir in your chopped vegetables and garlic.
Add the cooked rice and stir fry until the rice is hot.
Add your spices. Keep stirring to coat the rice.
Stir in the lemon juice.
Taste and adjust your seasoning with salt and pepper.
This is a great dish to make with leftover rice.
Change the spice mixture for a different flavour – for an Indian flavour, add 1 inch minced fresh ginger, 1tsp ground turmeric, 2 tsp cumin, 2tsp ground coriander, and 1tsp chilli powder.
