Tortillas and Fajitas

1 onion
1 – 2 peppers
1 courgette
200g Quorn mince or other mince
2 teaspoons ground cumin
1 teaspoon chilli powder
2 tablespoons lemon or lime juice
Sour cream
Pickled jalapenos
A small bunch fresh coriander

You will need the above recipes made and ready for your fajitas or as you prefer.
Slice your onion, peppers, and courgette. Crush your garlic.
Collect your spices and lemon juice.
Roughly chop your coriander.
Heat your tomato sauce.
When you’re ready to eat –
Pour a tablespoon vegetable oil into a wok and place over a medium to high heat.
Add your onion and stir-fry for 1 minute until it starts to soften.
Add your pepper, courgette, and garlic. Continue stir- frying for about 2 – 3 minutes until it begins to soften.
Stir in your Quorn mince and continue stir-frying until this is hot.
Stir in your cumin and chilli powder then the lemon juice. Season with salt.
Stir in the fresh coriander, turn off the heat and check your seasoning.
Warm your tortillas in a microwave for a few seconds or in a frying pan (without oil).
Assemble your fajita – smear a spoonful of pea guacamole over your tortilla, add your fried mince and vegetables, pour over a little tomato sauce and sour cream, add pickled jalapenos, and wrap up your fajita. Best eaten straight away.
