Pizza

Ingredients
180g strong white bread flour
45g wholemeal bread flour
½ teaspoon salt
1 teaspoon fast action yeast
1 tablespoon vegetable oil, preferably olive oil
About 140ml water, just warm
Tomato sauce – see recipe
100g mozzarella cheese or vegan cheese, grated or finely sliced
Topping of choice
1 – Weigh both flours into a large mixing bowl , add the salt and yeast – ensure they
are not touching as the salt will kill the yeast. Add the vegetable oil and stir together.
2 – If you have a microwave, warm the water for a few seconds until it is just warm.
3 – Add most of the water and stir in. Once it becomes difficult to stir, mix with your hands to form a dough, adding more water if needed.
4 – Pour onto the worktop and knead for 5-10 minutes. If it feels dry, add water, a drop at a time. It should feel moist but not sticky.
5 – Place the dough back into the bowl, place a tea town over the top and leave to prove for 45mins – 1
hour until the dough has doubled in size.
6 – Preheat the oven to 220℃ (200℃ fan oven). Place a large oven tray into the oven to get hot.
7 – Lightly grease a large oven tray. Stretch the dough out on the tray.
8 – Spread the tomato sauce over the pizza base. Top with the cheese and toppings. For a thin based pizza add the topping and bake straight away. For a thicker base, leave for 20 minutes before adding the topping and bake.
9 – Place the pizza on top the hot oven tray in the oven and bake at 220°c (200°𝑐 fan oven) for 12 minutes.
The hot tray in the oven will help to crisp up the base of your pizza. You can bake your pizza without this.
At the time of making, one pizza plus one portion of dough balls and garlic butter cost £1.50 per portion. This cost can be reduced depending on the toppings used.
